What Xg when contrasted to score tells us is that pool were far better in final third than the average prem team at converting and utd were worse defensively and offensively compared to average prem league team data. All the data is weighted relative to the aggregate for the league for similar chances.
That the average team would have scored 3 with the chances pool had only suggests pool were much better than average, not that if you played it 100 times pool would rarely score more than 3.
